Description

A heartwarming dish featuring tender beef simmered with sweet caramelized onions and a tangy balsamic glaze.


Ingredients

  • 2 lbs beef (such as chuck roast or brisket)
  • 1 large onion, sliced
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Season the beef with salt and pepper and sear it on all sides for 3-4 minutes per side. Remove and set aside.
  3. Add sliced onions and minced garlic to the pot, sauté for 10-15 minutes until caramelized.
  4. Pour in balsamic vinegar and deglaze the pot, scraping up any browned bits.
  5. Return the beef to the pot, cover, and reduce heat to low. Simmer for 2-3 hours until fork-tender.
  6. Serve hot, garnished with fresh herbs.

Notes

The dish tastes even better the next day; consider making it ahead of time. Leftovers can be used in sandwiches or salads.
