- 1 large onion, sliced
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced

Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Season the beef with salt and pepper and sear it on all sides for 3-4 minutes per side. Remove and set aside.
- Add sliced onions and minced garlic to the pot, sauté for 10-15 minutes until caramelized.
- Pour in balsamic vinegar and deglaze the pot, scraping up any browned bits.
- Return the beef to the pot, cover, and reduce heat to low. Simmer for 2-3 hours until fork-tender.
- Serve hot, garnished with fresh herbs.
Notes
