- 300g Rigatoni
- 500g Tender Beef, cubed
- 2 cups Heavy Cream
- 1 cup Grated Parmesan Cheese
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- Salt and Pepper to taste
- Fresh Parsley, for garnish
Instructions
- In a large pot, bring salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.
- Heat a large skillet over medium-high heat and add olive oil. When shimmering, add beef cubes and season with salt and pepper. Brown the meat on all sides, about 6-8 minutes.
- Add minced garlic to the skillet and cook for an additional minute until fragrant.
- Pour in heavy cream and scrape any bits from the skillet. Bring to a simmer and stir in grated Parmesan until melted.
- Fold the cooked rigatoni into the skillet, ensuring each piece is coated. If too thick, add a splash of reserved pasta water.
- Serve topped with fresh parsley for garnish.
Notes
For meal prep, consider preparing the beef and sauce in advance and refrigerating them separately. Reheat before serving.
