Description

A comforting dish of rigatoni enveloped in a rich creamy sauce with tender beef, perfect for family gatherings or a cozy weeknight meal.


Ingredients

  • 300g Rigatoni
  • 500g Tender Beef, cubed
  • 2 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste
  • Fresh Parsley, for garnish

Instructions

  1. In a large pot, bring salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.
  2. Heat a large skillet over medium-high heat and add olive oil. When shimmering, add beef cubes and season with salt and pepper. Brown the meat on all sides, about 6-8 minutes.
  3. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Pour in heavy cream and scrape any bits from the skillet. Bring to a simmer and stir in grated Parmesan until melted.
  5. Fold the cooked rigatoni into the skillet, ensuring each piece is coated. If too thick, add a splash of reserved pasta water.
  6. Serve topped with fresh parsley for garnish.

Notes

For meal prep, consider preparing the beef and sauce in advance and refrigerating them separately. Reheat before serving.
